Are you ready for the easiest (and tastiest!) healthy rocky road you have ever seen?? Look. No. Further. I originally posted this last year, but it doesn't get any better so here it is again!
1. Mix the raspberries, coconut and nuts together in a small loaf pan lined with non-stick baking paper.
2. Melt the chocolate and pour into the pan, making sure to cover all the ingredients. Sprinkle over buckwheat if using.
3. Freeze for at least 30 minutes (or refrigerate for 1 hour) before cutting into squares.
